This menu is perfect for a Sunday night when you can commit time to making something special for a special someone. It takes a little planning because the focaccia needs time to rise and rest but the other dishes are easy to put together. (You can also just buy focaccia.) Taking center stage is an herby mushroom pasta. Its creamy garlic sauce pairs nicely with the lightly dressed side of winter cabbage and kale. To finish, top a still-warm skillet cookie with a dollop of vegan ice cream. What we really like about this menu is that the combination of citrus and cabbage tastes like spring.
