Chocolate Avocado Pudding

This recipe takes no time to prepare, just plan in advance because it does need to be chilled before it is served.

Preparation

Scoop avocado flesh into a blender and add vanilla, cocoa, maple syrup, agave nectar, orange juice, and salt. Blend into a coarse puree. With motor running stream in ¾ cup hot water, blending until smooth and creamy.

Divide pudding among eight 4-6 oz ramekins or glasses and chill uncovered for at least 2 hours.

Top pudding with toasted nuts and/or fresh berries and serve.

¼ cup agave nectar

¼ cup fresh orange juice
