Ingredients

1 pound seedless cucumbers, thinly sliced

1 ½ teaspoons sugar

1 ½ teaspoons kosher salt

2 ½ tablespoons red wine vinegar

½ small sweet onion, very thinly sliced

3 tablespoons mixed toasted seed, such as sesame seeds, sunflower seeds or pumpkin seeds

Preparation

In a medium bowl toss together the cucumber sliced with the salt and sugar. Let stand for 5 minutes to soften slightly. Stir in the vinegar and onion and refrigerate for 10 minutes. Mix in toasted seeds just before serving and enjoy.
