Don’t be put off by the idea of using avocado to make a sweet pudding. It’s creamy texture and mellow flavor lends itself well to pudding and allows the chocolate flavor to shine. The best part? This recipe takes no time to prepare, just plan in advance because it does need to be chilled before it is served.

Preparation

Scoop avocado flesh into a blender and add vanilla, cocoa, maple syrup, and salt. Blend into a puree.

Divide pudding among 4-6 oz ramekins or glasses and chill uncovered for at least 2 hours.

Top pudding with toasted nuts and/or fresh berries and serve.

3/4 cup cocoa powder

1/2 cup maple syrup

1/4 cup almond milk or other non-dairy milk
