This is one of the easiest desserts to make. Involving just a microwavable bowl and two main ingredients, you can pull this dessert off without much planning. This bark makes a great present but is also the perfect dessert to have in the freezer for whenever a chocolate craving strikes.

Adapted loosely from Love and Lemons

| Yield: about 5 ounces of bark | Time: 10 minutes |

Ingredients

4 ounces of your favorite vegan dark chocolate

2 teaspoons coconut oil

⅓  cup chopped nuts, such as pistachios, pecans, almonds or walnuts

3 tablespoons dried or freeze dried fruit, such as cherries, raspberries or cranberries

3 tablespoons coconut flakes, optional

3 tablespoons seeds such as sesame, pumpkin or sunflower, optional

Preparation

Chop vegan chocolate bar and place in a microwave safe bowl. Heat chocolate, stirring every 30 seconds or so until completely melted. Add coconut oil and stir to combine.

Line a baking sheet with parchment paper and pour melted chocolate onto pan. Spread chocolate with an offset spatula until about ¼ inch thick. Top chocolate with various toppings and chill in the freezer until firm. Break up bark into pieces and serve. Store any remainder in the fridge or freezer.
